I want to fly KLAX to KSLC in my 767-300er, but Delta dosen't fly 767's on that route, so I will not get credit right?

Yes you will, you can fly an aircraft on any route as long as it has the range. You can fly the 767 from ORD-CVG which is a CRJ route in the RW for example.

The only requirements for equipment type on routes is that you're rated for the aircraft you're flying and obviously it can get there safely.
