If all the flights for the aircraft I've been assigned to are unavailable, then how do I choose a flight so I can complete my first-flight PIREP requirement?

They're not unavailable. Check the "Delta Virtual Airlines flight schedule" section in the Pilot Center. You can choose what aircraft type you want and find a flight. You can choose any flight you wish within your aircraft range, and it can be any airline.
