I don't really see the point of flight assignments. Could someone explain the difference between an assignment and an ordinary flight?

If you have one and the same flight isnt there the next day you can fly it with the .draft command on ACARS they will stay in your logbook for about 14 days

What does this mean? "If you have one and the same flight isnt there the next day you can fly it with the .draft command"

The schedule is updated daily.

A flight can be there one day, and the next day it's gone. As you know, if the flight isn't in the schedule at the time it was flown, it'll be rejected.

If you spot a flight one day, and feel like fying it later, you can save it as a Flight Assignment, so that it'll be available for you to fly it within the next 14 days, even if it dissappears from the schedule the day you fly it. This way, it gets approved.
