Peter you can fly any leg using any aircraft your rated for as long as you can complete it legally (fuel, range)
So you can fly 737 on a non-737 route.

OK, going through the Schedules the following Hubs have....

ATL - 72 Flights
CVG - 15 Flights
JFK - 26 Flights
SLC - 37 Flights

So as can be seen Atlanta is the primary Hub for 737's
