With this cooling, would it be possible for me to overclock the processor using AMD Turbo?

not necessary to go for a hexa core since FSX,FS9 etc will not utilize hexa core but quad core, therefore, go for 2600k with unlocked multiplier. AMD, not really, Intel is the benchmark and comes a bit more expensive but has protections on board so you dont fry your chip.
GTX570 or GTX580 if you can afford it, you will have to balance your PC with a descent card otherwise your system is unbalanced with a too fast or too slow graphics card, GTX570 is the best on the market also for value.

Ok Intel "fanboy". Not sure where you come up with AMD doesnt have protection. Of course it does! Running my 970 @ 4.3ghz Vcc 1.48v and 48c on air. Most 2600K's run at 60 to 70c. Now thats scarey! Another brainwasher! Save yourself lots of money compared to an Unintel and buy some real nice addons. You dont need to spend 500.00 on a 580 video card either! A 460 or 470 will do all you ever need and wouldnt notice the difference.

Of course I am Intel fan because you know what you get ;-), i run my i7-980X at 1,325v with water cooling so no issue on this, with protection i mean that many AMD do not have thermal protection and this comes at a price, however, both brands will be okay if the poster likes either of them. if you watercool you wont run 60-70, obviously.. I am running at 32 degrees celcius, very descend.
For the grapics card you do want to balance your system and I know what i am talking about ;-) anyways, if you need more help just drop me an email, cheers

I'm going with GTS 450 Zotac w/ Fermi (whatever that is). Hope it serves the purpose: plays FSX at full settings with PMDG 744X and MTX and full WOAI.
