I was flying an online flight on VATSIM with a PMDG 737NGX, when FS crashed. When I loaded the saved ACARS flight, the PMDG started the initialization sequence (with Engines off), and then when it finally loaded I was dropping at 15,000+ FPM and no longer on my flight plan. Additionally, NONE of my flight information was saved in the FMC. Does anybody know how to fix this? I'm frustrated.

I don't think ACARS can correctly configure the NGX. It won't save your FP in the FMC.

Yes, and sometimes it won't let you use your rudder if you try this. If it happens, it is just better to scrap the flight than be frustrated.

I am pretty sure that ACARS will not re-programm the FMC for a flight recovery.

Re-start in Pause mode, reprogram everything in the FMS from scratch, using your original data, then un-pause. Make sure you keep track of where you are, so if you HAVE to recover, you can put the next waypoint you were headed to as the first waypoint (direct to). I've had to do this several times with other FMS equipped aircraft, but I don't use the NGX. Just assuming it's the same.

I should add - if you're on VATSIM, don't reconnect until you're flying again and you've checked if ATC is on, or other aircraft in the area, using ServInfo or whatever.
