I'm currently a 727 Captain and the A310 is in my stage but I don't have the option to write the exam for it and there isn't an Operating Manual for it in the download section. How do I get rated on this?

Bill, Delta does not operate the A310. To get your A310 ratting, you will have to request an additional ratting in, or transfer to, the 767.

Pretty much. Once you get your 767 rating, you will automatically be qualified to fly the A300 and A310.
