I think you'll want to be comfortable with the a/c and the FMC before taking the checkride.
I'm not sure the FMC is going to help you much in a checkride anyway.
Youtube is typically seeded with good instructional videos on programming the FMC. You're going to have to put some time into learning it. It's a complex piece of equipment with no easy button. Once you get the hang of it, it's not so bad. It's very powerful.

Fleet 757? If it is not an RNAV procedure, you can do them the old fashioned way by tuning the VORs and flying the radials....

What I don't understand is that you already have 757 rating so you don't need a check ride in the 757 to move on. But if you want to learn how to use the FMC in certain maker then as Jason said, youtube will do just fine.
