When I try using VNAV, I engage autopilot then select VNAV, but the vertical speed always seems to sky rocket far too steep for a typical climb. How can I fix it so that VNAV climbs a little more gradually?

747. Im talking about climbout after takeoff. the vertical speed goes up to like 5000fpm, unless I'm doing it wrong...

That's nothing too crazy. People tend to think aircraft climb out at like 2000 fpm max but thats just not true. Now if you are fully loaded, that won't happen but a lightly loaded "heavy" aircraft (747, 777, etc...) climb amazingly well with all that power they have with those engines.

Most airliners won't ever exceed 20 degree pitch just to keep the passengers comfortable so as long as you are staying below that, everything is normal.

We just had a FedEx B77L climbing like a rocket at work. The controller asked him his climb rate. 5950/min.

Ok, but I lose speed when I start climbing like that, so what should I change in that case?

Are you flying the PMDG or what model? The whole point of VNAV is to climb via a calculated path from the FMC with a set thrust and adjusting the vertical speed to maintain the determined climb speed. It's very similar to LVL CHG mode but not exactly the same.

Actually the VNAV doesn't even seem like it is engaged. I can push up and down on the yoke at change the pitch freely.

It's a known limitation. Appendix 6 of the 747 AOM discusses a work around.
