After I choose a flight and start ACARS it says. "There are 3 dispatcher routes available. Would I like to use one?".

I know that there are people who dispatch routes, I just don't know why or how to use these routes. I read FAQ and I don't see anything in regard to dispatched routes. If it is anything that helps someone's job at the airline I would love to assist them in reaching their dispatch achievements if I am able.

These routes are mostly preferred Delta Airline routes. If a dispatcher is offline, then depending on destination you will get a few options.

The only drawback, is that when Im departing from an airport with ATC coverage, more often than not I get re-routed by ATC. So I use Flight Aware or the preferred route database from the ARTC website.

After clicking the button, you select a route (or one is given to you by a dispatcher), and it loads the route in ACARS for you.
It's simply a time saving step if you don't want to plan your own route and want one provided.
A lot of people use it, and you are welcome to modify the route after it's in ACARS.

One thing that I have found with the auto dispatch routes is that the routing can be interesting at times. I always make sure view the route map before accepting, but as a whole I find this feature in ACARS very helpful.

I was surprised that it takes the current METARS into consideration. The SID/STAR/runway selection on the first suggested routes usually match the wind direction from current weather.
It's not always perfect, but it does have that logic.

Taking the METARs into account is a gem Luke hid in the software. it only works if there happen to be runway dependent routes in the database.

Yes, as Bob said, you can edit the waypoints even after you've taken off.
