Sounds like you might have run into a very strong gusting headwind. Were you flying online or with FS real world weather at the time? What was your altitude and do you know what the winds aloft were?

Another thought. Are you sure that you did not unknowingly turn off AT or any of the speed hold switches?

Also did your pitot tube freeze or did you get ice in your engines? I always fly with the pitot heat on (shift H) and the engine deicers (overhead panel in 757) turned on. You just never know....and it doesn't cost you a thing (it's virtual!).

I don't think engine/wing ice is simulated in FS is it? .....I've seen my pitot freeze over and it goes straight to zero then comes back in a few seconds.

I always fly with pitot heat on, and I am absolutely positive I didn't accidentally hit the AT to make it turn off. I fly with the weather that SB3 downloads. Weird...

According to the manual you should keep the Pitot heat on the entire flight as long as your engines are running. Sometimes autopilot "has its own mind" and does some odd things. It could be you were to high, or experiencing a heavy winD. Real world weather as already told can have worse wind conditions. Check everything next time it happens to try to identify the source.
Cha-Ching!
